Too Much Baking Powder

by admin on June 8, 2012

PROBLEM:

I accidentally added too much baking powder to my cake batter. Can I fix it before I place it in the oven?

Baking powder is a chemical leavener that consists of baking soda and an acid ingredient which together react to release a gas. This causes the cake batter to increase in volume, and it helps produce the shape and texture of your finished product. Adding too much baking powder will result in a bitter taste and may cause the batter to rise rapidly and then deflate in the center.

EMERGENCY SOLUTION:

If you know exactly how much extra baking powder you added, you can add equal portions of the other ingredients to the batter before baking. You will probably need another smaller pan to bake the excess.
